This bright and cheery looking bowl is famous for its pink soup made from Chinese red bean curd which gives the soup a sweet, tangy and sometimes spicy flavour. Rat Na (rice noodle with gravy)

This Thai-Chinese noodle dish is a comfort food classic. The dish was originally served in high-end restaurants in China before spreading to more common places. It’s traditionally prepared using stir-fried wide rice noodles topped with Thai kale, sliced pork and a thick gravy sauce. Kuey Tiew Rua (boat noodle)

travelling via canal was a common way for people to commute and vendors served the noodles right from a boat. Even though the dark broth, made with with pig’s blood, maybe seem a little off-putting, we guarantee you won’t put your bowl down once you get a taste of the hearty, umami flavour. Khanom Jeen (fresh rice noodle with toppings)

Khanom Jeen is a unique type of thin rice noodle which is sometimes fermented for up to three days to develop a slight tangy flavour. In Bangkok, you’ll find this dish with a super wide variety of toppings to choose from. We highly recommend topping it with “nam ya,” a spicy, fish-based sauce to which you can also add toppings such as fish balls or even crab meat. Yum Woon Sen (glass noodle salad)

Talk about a refreshing noodle dish perfect for the tropical climate. Yum Woon Sen features glass noodles, which are made from bean thread and can be mixed with any topping of your choice and finished off with lime and chilli-based fish sauce. The most common topping to enjoy is shrimp mixed with minced pork. Some vendors will add fermented pork sausage or even squid to the dish.
