Noodles can be found on nearly every street in Thailand. Each different type comes with its own background and unique flavour profile. We’ve selected five noodle dishes you have to try when you’re in Bangkok. Happy slurping!

Yentafo (pink noodle soup)

This bright and cheery looking bowl is famous for its pink soup made from Chinese red bean curd which gives the soup a sweet, tangy and sometimes spicy flavour. Usually, the soup is served with various types of fish balls, morning glory and other toppings such as squid, fried wontons and even pig’s blood curd. Don’t shy away from trying everything, because that’s what make this comforting dish so special. Find it at: Nai Ouan Yentafo Sao Ching Cha 41 Soi Nawa, Khwaeng Sao Chingcha, Khet Phra Nakhon Krung Thep Maha Nakhon 10200 Tel: 02 622 0701 Get directions

Rat Na (rice noodle with gravy)

This Thai-Chinese noodle dish is a comfort food classic. The dish was originally served in high-end restaurants in China before spreading to more common places. It’s traditionally prepared using stir-fried wide rice noodles topped with Thai kale, sliced pork and a thick gravy sauce. Some other delicious variations include the use of vermicelli rice noodles or deep-fried egg noodles as a base. Find it at: Rat Na Yod Pak 40 Years at San Chao Pho Sua 514 Thanon Tanao, Khwaeng San Chao Pho Sua Khet Phra Nakhon, Krung Thep Maha Nakhon 10200 Tel: 02 622 3899 Get directions

Kuey Tiew Rua (boat noodle)

travelling via canal was a common way for people to commute and vendors served the noodles right from a boat. Even though the dark broth, made with with pig’s blood, maybe seem a little off-putting, we guarantee you won’t put your bowl down once you get a taste of the hearty, umami flavour. Find it at: Kuey Tiew Rua Pa Yak Ratchawithi 10 Alley, Thanon Phaya Thai Ratchathewi, Krung Thep Maha Nakhon 10400 Tel: 089 921 3378 Get directions

Khanom Jeen (fresh rice noodle with toppings)

Khanom Jeen is a unique type of thin rice noodle which is sometimes fermented for up to three days to develop a slight tangy flavour. In Bangkok, you’ll find this dish with a super wide variety of toppings to choose from. We highly recommend topping it with “nam ya,” a spicy, fish-based sauce to which you can also add toppings such as fish balls or even crab meat. Have it with a side of fresh and pickles vegetables for a well-rounded and satisfying lunch. Find it at: Ari Khanom Jeen Alley next to Phahonyothin Center Building Samsen Nai, Phaya Thai, Bangkok 10400 Tel: 086 143 0393 Get directions

Yum Woon Sen (glass noodle salad)

Talk about a refreshing noodle dish perfect for the tropical climate. Yum Woon Sen features glass noodles, which are made from bean thread and can be mixed with any topping of your choice and finished off with lime and chilli-based fish sauce. The most common topping to enjoy is shrimp mixed with minced pork. Some vendors will add fermented pork sausage or even squid to the dish.
